Mexican Hot! Hot! Hot!

Ingredients

  • Chopped cooked chicken
  • Scottish Pride Cheddar
  • Chopped red peppers
  • Chopped jalapeno peppers
  • Mayonnaise
  • Sweet Chilli Sauce
  • Soft tortilla
  • Coriander

Method

  1. Mix chopped cooked chicken, Scottish Pride Cheddar, chopped red peppers and chopped jalapeno peppers with a little mayo and a good dash of sweet chilli sauce to bind
  2. Spread this over one half of a soft tortilla
  3. Scatter over some sprigs of coriander and fold into quarters
  4. Slip into a toastie bag and toast for 2- 3 minutes. Alternatively toast under the grill, turning over half way through or toast on contact grill (George Forman grill)

Toastie Tip

Serve with a dollop of sour cream and chives on the side.
