Mexican Hot! Hot! Hot!

Ingredients
- Chopped cooked chicken
- Scottish Pride Cheddar
- Chopped red peppers
- Chopped jalapeno peppers
- Mayonnaise
- Sweet Chilli Sauce
- Soft tortilla
- Coriander
Method
- Mix chopped cooked chicken, Scottish Pride Cheddar, chopped red peppers and chopped jalapeno peppers with a little mayo and a good dash of sweet chilli sauce to bind
- Spread this over one half of a soft tortilla
- Scatter over some sprigs of coriander and fold into quarters
- Slip into a toastie bag and toast for 2- 3 minutes. Alternatively toast under the grill, turning over half way through or toast on contact grill (George Forman grill)
Toastie Tip
Serve with a dollop of sour cream and chives on the side.
